Smoked Cheese a la Barb

Things around the Callaghan house are somewhat frantic; I don’t know how we ever have time to do anything. A few weeks ago I had promised a friend to smoke some cheese for him. He dropped of three bars of cheddar cheese from the local mega mart sale. Unfortunately I was in Toronto for a conference for my full time paying employer, the Government of Canada. What fun is it to spend three days reviewing new bankruptcy legislation. I have no idea how I ever became a Federal Bankruptcy Analyst, some things you just sort of fall into I guess.

Well my buddy being very excited to get his cheese was calling every night and Barb decided to take matters into her own hands, how hard could this be? Cheese, Bradley smoker, cherry pucks and three hours of her time.


 

I don’t think Barb was there for the "COLD SMOKING LESSON" somehow I think there is a molecular change of the cheese when you smoke over 220*f. I was warned not to post these pictures, but I could not resist.
